Gazpacho Shots - a chilled refreshing Soup for the Hot Summers!

Weekends is the time when I venture into the Kitchen and concoct my experiemnts!  I like to use the season's freshest ingredients and try to consume them as raw or with a cooking method that keeps their nutrition intact!

Thanks to the great amount of humidity, it has been stifling hot in Mumbai and any chilled item is always welcome! When Amma Appa used to go to Bengaluru, I used to make this Gazpacho Shots with the veggies that Amma would have stocked in the refrigerator! Today I made this keeping in mind Amma Appa's preference and hence did away with Garlic!

Amma loved it and was eager for a second shot. Appa had to warm up to idea of drinking a cold soup that too raw pressed soup! As such making him eat salads is like running behind Dennis the Menace!!

Gazpacho Shots

INGREDIENTS

1 Tomato, large
1/2 Beetroot, small. peeled
1 Cucumber
1 Carrot
2 cloves Lahsun | Garlic, optional
1 Red Bell Pepper, small
1 Yellow Bell Pepper, small
1 " Adrak | Ginger
4 Fresh Basil Leaves
1 tblsp Lemon Juice
1 tsp Red Chilli Flakes
Mint Leaves, for garnish

Gazpacho Shots

METHOD
  • Cut the bell peppers and de-seed them.
  • In a juicer, extract the juice of the raw veggies.
  • Add lemon juice half of the chilli flakes. Mix well. Refrigerate for  an hour. You can chill it as per your preference.
  • Serve in individual serving shot glass, garnish with remaining red chilli flakes and Mint leaf.
  • Serve chilled.
