7 Cup Burfi - a melting delight!

7 Cup Burfi is Amma's favourite sweet and this will be always on the top of mind when she wants to share some sweet with visiting friends and family. As I was going through the archives I realised, I have not yet posted this lovely sweet and since many festivities are around the corner, I got into the posting mode.

This recipe Amma was introduced 3 decades ago by one of our family friend. Guess Amma made this for the first time during Diwali and since it became a hit with all of us, this has been in her repertoire of sweets since then.





The fact that the name of this sweet is derived by the measurement of ingredients that go into its making, made this sweet even more a easy way to remember and since the preparation is easy, much made sweet on most occasions. 




INGREDIENTS

1 cup Besan | Chick Pea Flour
1 cup Fresh Coconut, grated
1 cup Badam | Almond Powder
1 cup Thick Milk
2 cups Sugar
1 cups Homemade Ghee | Clarified Butter, melted
1 tsp Elaichi | Cardamom Powder
1/2 tsp Homemade Ghee | Clarified Butter, melted, for greasing plate



METHOD
  • Grease a tray | plate nicely and keep aside.
  • In a small pan, add ghee and heat it. Once hot, switch off the flame and keep ready.
  • In a thick bottomed kadhai dry roast Besan for about a minute or two to remove the raw smell. ensure the Besan does not get burnt.
  • Add  grated coconut, almond powder, sugar and milk. Keep the flame on low and stir till the sugar dissolves completely. Keep stirring continuously.
  • As the mixture becomes aromatic and separates from the sides of the kadhai, add the elaichi powder and mix.
  • Once the mixture becomes uniform separated from the sides of the kadhai, switch off the gas and pour the mixture on to a greased tray and spread the surface to get uniform level.
  • After a minute, as the mixture begins to set, cut to desired shape.
  • Once 7 Cup Burfi has cooled down a bit, gently separate the pieces and store in an air tight container.

Note:
a. The Besan must be fresh for making delicious 7 Cup Burfi.
b. Make sure to stir continuously after adding all the ingredients.
