Karela Pickle - a mouthwatering accompaniment to add taste to any meal!

Appa loves pickles, but I am like a mother hen that controls his portion size and many a time poor thing has to have it sans the same. Everything in moderation is welcome, but Appa dear makes the pickle itself as his side dish rather than just an accompaniment! What to do, Amma made pickles are so mouthwatering! 

Till date never been able to share all of Amma's homemade pickles which are loved across our family and friends. Any one visiting us, sure shot, based on their likes, Amma will happily pack a jar of the same!

I decided to get into the act of sharing her pickle recipes too and here is her classic Karela Pickle! This is her very own creation thanks to Appa and me buying in bulk Karela for making Karela Vattal!


INGREDIENTS

250 gms Karela | Bittergourd
1 tblsp Saunf | Fennel Powder
1 tsp Haldi | Turmeric Powder
2 tblsp Lal Mirch | Red Chilli Powder
1 tblsp Dhania | Coriander Powder
1/4 tsp Hing | Asafoetida Powder
1/4 tsp Rai | Mustard Seeds
1/4 tsp Methi | Fenugreek Seeds
1 sprig Kadhi Patta | Curry Leaves
2 tsp Salt or to taste
3 tblsp Til | Sesame Oil


METHOD
  • Wash and cut the Karela lenth wise. Thereafter chop into small bite size pieces. Par boil and strain the water. Keep aside par boiled Karela pieces.
  • In a small bowl, add all the powders mentioned in the ingredients and salt. Mix well.
  • In a kadhai, heat oil and add rai seeds, methi seeds and curry leaves. 
  • As rai splutters, lower the gas flame and add all the mixed powders. Stir well for a minute.
  • Add the par boiled Karela pieces. Mix well.
  • Stir fy for 2 to 3 minutes.
  • Switch off the gas. Once the Karela Pickle comes to room temperature, transfer to a clean air tight jar | bottle.
Relish this tasty Karela Pickle with Rice | Chappati | Paratha. This pickle can be kept outside for 2 days in room temperature, Thereafter it needs to be refrigerated. Under refrigeration it can last up to 2 months.

Note:
This is medium spicy. You can add more red chilli powder as per taste.
