Carrot Onion Uttappam

Carrot Onion Uttappam is an all time favourite at home. Though Appa is a die hard fan of plain Onion Uttappam, Idli, Dosa Uttappam & Adai, in any form,24/7, 365/6 days is welcome!! 

Many combinations of mix-veg Uttappam can be concocted, but this combination is what is a super hit with us. Please do feel free to add various veggies like thinly sliced bell peppers, finely diced tomatoes, grated beetroot...In a nutshell, veggies that cook fast can be added, as per individual tastes!

This makes an ideal lunch box item and has been a most-had tiffin during school days and continues well into the corporate days too..

Uttappam


Ingredients:
1 Carrot, grated
3 Onions, medium sized, finely chopped
2 tblsp  Fresh Dhania | Coriander leaves, finely chopped
3 Hari Mirch | Green chillies, finely chopped
As required Oil, preferrably Til | Sesame Oil

Method:
  • In a bowl add the Dosa batter and keep aside. We can use left over batter also. 
  • Cut/grate the required veggies and keep ready. 
  • Place the dosa tava on the flame, on high. Take 1/2tspn of oil and spread it with a piece of tissue paper/cloth on the surface of the tava. Once the tava is hot, reduce the flame to medium.
  • Take a ladle full of dosa batter and spread it into a thick roundel of about 5 inches.
  • Place the prepared cut veggies on top of the uttappam. Let loose the artist in you...
  • Drizzle a bit of oil along the circumference of the uttappam and on top of the vegetables.
  • Cover the uttappam with a lid and let it cook for about 3 to 4 minutes. By this method the top side of the uttappams do not get the slight burnt look!
  • Slide the dosa spatula gently to remove the cooked uttappam onto a plate.
  • Serve it hot with any Sambhar, Chutney and/or Podi.
We had this delicious Carrot Onion Uttappam with Moringakai_Tomato_Peas Sambhar and Fresh Coriander_Fried Gram dal chutney for breakfast. The aroma of the uttappam was so tempting that it was sheer will-power to abstain from savouring them in order to capture the perfect image!
