Gulabi aankhe jo dekhi teri...Sharabi yeh dil ho gaya... This is the song that came to mind when Amma presented yet another Beetroot delight - Beetroot Raita! Poor thing has tried so many avatars of Beetroot to get an A OK from Appa and I and yes...this is another success that Meena's Taste Mantra shares with YOU!
Ingredients:
1 Beetroot, small
2 tblsp Curd | Dahi, thick
1 Green Chilli
To taste Salt
Method:
- Wash the beetroot well. Boil, cool and peel it. Chop it roughly.
- Grind the chopped beetroot, green chilli and salt to a fine paste.
- Whisk in the curd.
- Transfer to a serving bowl.
- Serve it with any Paratha | Pulav | Biryani.
This tastes surprisingly delicious and somehow the beetroot taste that Appa and I do not prefer. gets camouflaged! Simple yet tasty and looks so beautiful..with added benefits of all the nutrition that a beetroot provides!
