Sitaphal Phirni - An Indian royal dessert with Sugar Apple

Sitaphal | Sugar Apple is in season. This fruit is Appa's favourite and when in season he relishes them responsibly. This time Amma wanted to try sitaphal infused phirni. During Mango season, Amma had made Mango Phirni and we all loved it. So on the same lines, she prepared this delicious Sitaphal Phirni and we all loved it.

This dessert is very easy to make and can be set in individual serving bowls. So when family and friends visit you, in a jiffy you can serve these chilled delights!

Sitaphal Phirni

INGREDIENTS

3 Sitaphal | Sugar Apple
1 liter Milk
3 tblsp Soaked Rice
1 cup Sugar
10 to 12 Pistachios
1/2 tsp Green Elaichi | Cardamom Powder

Sitaphal Phirni

METHOD
  • Remove the sitaphal pulp and de stone it. Roughly cut the pulp and keep aside.
  • In a deep bottomed pan heat milk and let it reduce a bit.
  • Drain the soaked rice and coarsely grind it. Add very little water as you grind the rice.
  • To the reduced milk add coarsely ground rice and on medium heat, cook till the mixture thickens a bit. Stir continuously so that the rice does not get stuck to the bottom.
  • Add sugar and stir till it dissolves. 
  • When mixture reaches desired consistency, switch off the gas. Keep the phirni aside to cool a bit.
  • Add sitaphal pulp and mix well. 
  • Set in individual serving bowls and let the sitaphal phirni come to room temperature.
  • Refrigerate and serve chilled.
