Jowar Vermicelli Sago Veg Idli

Today Breakfast is a creation based on all three's suggestions for ingredients...Amma wanted Jowar...Appa Sago...and I wanted something made from Vermicelli! Amma had some soaked sago pearls and so she decided to try this unique Idli...the name for the same kept as Jowar Vermicelli Sago Veg Idli!

Jowar Vermicelli Sago Veg Idli
Ingredients:
1/2 cup Jowar rava, fine
1 cup Semiya | Vermicelli
2 tblsp Sago | Sabudana | Tapioca Pearls, soaked
3 Green chilli, finely chopped
1" Adrak | Ginger, finely chopped
1 tbspn Fresh Coriander leaves, finely chopped
1 Carrot, small, diced
1 cup Curd, thick
1 tspn Fruit Salt
1/2 tspn Olive oil, to grease Idli moulds
1 tsp Salt | To taste

Method:
  • In a pan dry roast Semiya taking care it does not get burnt, for about 3 minutes. Transfer this into a mixing bowl.
  • In the same pan roast the Jowar rava for about 2 minutes. This is just to warm the jowar rava. Transfer this into the same mixing bowl.
  • Add curd and mix well. Cover and keep aside for 10 minutes.
  • After 10 minutes add all the remaining ingredients except Eno salt. Check for salt and adjust to taste. The consistency of the batter should be thick. if required add little water to get idli like thick batter consistency.
  • Grease the Idli moulds with oil.

  • Add the Eno salt and mix well. This will loosen up the batter due to the aeration process.
  • Pour spoonfuls of the batter into the Idli mould as we normally prepare Idlis.
  • Keep the moulds in the steamer and steam for 15 minutes. In case using a pressure cooker, steam them for 15 minutes without the whistle.
  • Serve hot the healthy nutritious Jowar Vermicelli Sago Veg idlis with any Podi | Chutney | Thogaiyal or Sambar. These idlis look so colorful and when you break them into halves the myraid of textures is really wonderful...the round sago, the linear vermicelli and the granular jowar along with the colorful carrots and dhania! Simply YUM!
