Oats Veg Soup

During winters, we prefer to have a light meal at night. As a result we end up having many variations of nutritious, satiating soups! Oats Veg Soup is very refreshing in  and is very tasty. You will want to have one more bowl of this soup on a cold winter night for sure!

When Amma Appa are visiting my sister, I normally end up having soups for dinner as this is kind of a comfort meal...easy to make...and the portion easily controlled as per my requirement!

Oats Veg Soup

INGREDIENTS

1 tblsp Oats
1/2 tsp Black Pepper
3 tblsp Beans, finely chopped
3 tblsp Cabbage, finely chopped
1 Tomato. finely chopped
1/2 Lemon's Juice
To taste Salt

METHOD
  • Grind Oats and Black Pepper to a coarse powder,
  • In a vessel add 2 cups water and chopped vegetables and keep on medium flame. Let the vegetables cook. Ensure they are not overcooked as the vegetables need to remain crisp.
  • Add ground oats and black pepper, mix well. 
  • Add salt and add water to adjust consistency of soup.
  • Let this come to a boil.
  • Switch off the gas.
  • Add lemon juice and mix well.
  • Serve hot with lemon slices and soup sticks.
A wholesome nourishing soup full of flavour! This quantity is sufficient for three serves.
