Veggie Rice Sevai|Noodles Delight

Amma loves to keep inventing recipes and as a result of her creative mind came to existence this wonderful Veggie Rice Sevai Delight -  a delight as when Appa and I came back from our local market, Amma had made this pleasing to the eye sevai!

The inclusion of veggies makes this sevai so delicious and this is a great Twist to the traditional Sevais!

Veggie Rice Sevai|Noodles Delight

INGREDIENTS

125 gm Instant Rice Sevai | Noodles
Water, for Sevai
1 Tomato, cut length wise
1 Onion, cut length wise
1 Green Chilli, cut length wise
1/2 tsp Channa Dal
1/2 tsp Urad Dal
1/2 tsp Rai | Mustard Seeds
1 sprig Kadhi Patta | Curry Leaves
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp Oil 
To taste Salt

METHOD
  • In a large vessel boil water and then switch off the gas. Mix salt and then add the Instant Rice Sevai. The sevai must be completely covered by boiling hot water. Cover and after 3 minutes, drain the water completely. 
  • Transfer the cooked sevai to a plate and spread them gently across the plate so that they are fluffy and separated.
  • In a non stick pan, heat oil and add rai, urad dal, channa dal, and curry leaves.
  • When rai splutters add onion and green chilli and saute for 1 minute. The onion needs to just sweat and not change colour.
  • Add Tomato and saute for a minute.
  • Add cooked sevai and gently mix well. On low flame cook for 2 minutes and then switch off gas.
  • Transfer to a serving bowl and garnish with finely chopped dhania leaves.
  • Serve hot along with Coconut ChutneySambar|Rasam.
We just loved this new twist that Amma created today! Simply YUM!
