Jowar Atta Gud Papdi | White Millet Whole Wheat Fudge


Traditionally Gud Papdi is made with only whole wheat flour. Since we got Jowar ground at our local Chakki | Flour mill, Amma is eager to experiment with this flour in as many ways possible. As a result of that we tried this healthier twist by adding Jowar flour along with Whole Wheat Flour and the result is simply delicious - Jowar Atta Gud Papdi

This is so delicious and while preparing this sweet, the aroma that wafts across is simply divine! Our neighbour could not resist and she rang the door bell to ask Amma what is special for today! They too loved this and the first person to note down the recipe!


Appa loved the taste and the fact that this has a nice crumbly, crispy texture thanks to the addition of roasted White Til and little bit of dry fruits while making this version of Gud Papdi. The addition of White Millet | Jowar Flour has made this even more delicious! The flour itself is very tasty and we have to keep it in an air tight container else from somewhere ants make a bee-line to have their share of the sweet flour!

INGREDIENTS

3/4 cup Jowar | White Millet Flour
3/4 cup Whole Wheat Flour
3/4 cup Homemade Ghee | Clarified Butter
1 cup Vellam | Gur | Gud | Jaggery, grated
1/4 tsp Saunf | Fennel Powder
1/4 tsp Elaichi | Cardamom Powder
1 tsp White Til | Sesame, dry roasted
1 tblsp Badam | Almond, finely chopped
1 tblsp Pista | Pistachios, finely chopped

METHOD

  • Grease a plate with ghee and keep aside.
  • In a kadhai, add ghee and let it melt. Once ghee is melted, reduce flame to medium.
  • Add jowar flour and whole wheat flour. Mix well. Saute continuously till a nice aroma wafts. Ensure the flour does not get burnt. 
  • Once the flour changes colour to golden, add saunf and elaichi powder, mix well. Saute for a minute and switch off the flame. 
  • Add grated jaggery, roasted til and half quantity of chopped almonds and pistachios. Combine them well into the flour. The texture would appear crumbly but as the jaggery melts, it will become a bit soft. 
  • Once the jaggery is blended well with the flour, transfer into the greased plate and spread evenly. 
  • Garnish with chopped Almonds and Pistachios gently pressing them on the surface of gud papdi. 
  • Once gud papdi becomes a bit cool, while still it is warm, make marks of desired shape and keep aside. 
  • After the gud papdi has come to room temperature, gently cut them along the marks and transfer to an air tight container.
