Today Amma wanted a simple satvik lunch and so the menu planned was Jowar Rice Roti, Rajgira Kadhi, Lemony Carrot Salad, Moong Sprouts and Kothamalli Moru.
Amma loves this salad and she does not mind being the person to finish this off! This salad is the most frequently prepared one at home! Easy to make, mouth watering flavours and aaahhhh what a visual delight too!
INGREDIENTS
3 Carrot, peeled and grated - the orange variety not Delhi red carrots
1 tsp Adrak | Ginger, finely chopped
2 Green Chilli, finely chopped
1 Lemon's Juice
1 tsp White Til | Sesame Seeds, dry roasted
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
To taste
For Tempering
1/2 tsp Oil
1/2 tsp Rai | Mustard Seeds
2-3 Kadhi Patta | Curry Leaves
METHOD
- In a mixing bowl, add grated carrot, chopped ginger, chopped green chilli, half of the chopped dhania leaves, salt and lemon juice. Mix well.
- In a small pan heat oil and add rai and curry leaves. When rai splutters, pour the tempering on top of the Carrots and mix well.
- Transfer to a serving bowl and garnish with remaining dhania leaves and roasted white til.
- Serve as Salad or a side dish along with Roti | Rice.
We relished Lemony Carrot Salad along with Jowar Rice Roti and Rajgira Kadhi. We finished this lovely meal with a glass of refreshing Kothamalli Moru.
