Mix Veg Rice

Appa loves plain flavours and sometimes he just detests any masala powders! So Amma makes simple flavoured rice by just adding Jeera | Cumin and Dal Chini | Cinnamon along with a host of veggies!

Very easy to make, a delight to behold and so YUM!

I love to have food with varied colours and Amma tries her best to incorporate varied hues in each meal! truly blessed to eat such healthy spreads!

Mix Veg Rice

INGREDIENTS

200 gms Basmati Rice
50 gms Cauliflower, small florets
1 tblsp Red | Yellow | Green - Bell Peppers, each, small cubes
1 tblsp French Beans, cut diagonally into 2 cm pieces
1 tblsp Carrot, 1/4 " cube
4 Babycorn, sliced into thin roundels
2 tblsp Spring Onion Leaves, finely chopped
1/2 " Stick Dal Chini | Cinnamon
1 tsp Jeera | Cumin Seeds
2 tsp Oil
1 1/2 tsp Salt | To taste

METHOD
  • Wash and soak Basmati Rice for 1 hour, in 2 cups water. Keep aside.
  • In a kadhai, heat oil and add Jeera and Dal Chini. 
  • When Jeera crackles add all vegetables except spring onion greens and saute for 2 to 3 minutes.
  • Add salt and mix well. 
  • Spread the vegetables in the kadhai to form a layer.
  • Add soaked rice as a layer on top of the vegetables.
  • Add the soaked rice water gently from the sides.
  • After the water comes to a boil, reduce the flame to low and cover cook for 5 minutes.
  • After 5 minutes, add 1 tblsp of spring onion greens and gently fold in the rice from the sides so that the rice grains get separated. 
  • Cover cook for 5 minutes.
  • Once the Rice is cooked, switch off the gas. 
  • Transfer to a serving bowl. Garnish with remaining Spring Onion Greens.
  • Serve mix Veg Rice hot with any Raita | Pickle | Roasted Papad, Dal | Kadhi.
We relished this wonderful Mix Veg Rice with Curry Leaf  Kozhumbu.
