Berry Yogurt Cheesecake - A no bake version

I have been wanting to make the no-bake version of cheesecake but the calories that go into it, is always the factor for me to shy away from the same. So I tried to make a mix n match, by adding some yogurt with very little cream cheese! The result was amazing and the beauty of this recipe is that we can make individual serving portions and set it a day in advance and wow our family and friends while relishing the same with them.

Amma Appa did not want to have the full fledged cheesecake and hence the idea of using fruit flavoured yogurt. The taste is delicious, but still thanks to the sugar and little bit of the Cream Cheese, this is rich. So its best to enjoy this responsibly!

Berry Yogurt Cheesecake

 INGREDIENTS

Base Layer
4 Crackers
2 tsp Homemade Butter
1/2 tsp Powdered Sugar
Middle Layer
200 gm Raspberry Yogurt
1 tblsp Cream Cheese
2 tsp Powdered Sugar
Top Layer
4 Strawberries
2 tsp Powdered Sugar
1 tsp Strawberry Instant Jelly Powder
1 tblsp Water
A drop Lemon Juice

METHOD
  • Base Layer
    • Powder the crackers to grainy texture. Add powdered sugar and mix well.
    • Add butter and combine well.
    • Add equal portions into individual serving glass and press down to get a firm base. 
    • Refrigerate for atleast 30 minutes.
  • Middle Layer
    • In a vessel combine raspberry yogurt, cream cheese and powdered sugar. Whisk well to get a thick consistency. Since the cream cheese I used had a bit of salt, I did not add additional. A pinch of salt enhances the flavour.
    • Add equal portions of the yogurt-cheese mixture into the individual serving glass and cover the glass with cling wrap | aluminium foil. Refrigerate for atleast 8 to 9 hours. I like to set these overnight, as they set well.
  • Top Layer
    • Grind to a smooth puree strawberries along with powdered sugar.
    • In a saucepan add the puree and water. Mix well and let it cook for 2 minutes.
    • Add Strawberry Instant Jelly Powder and switch off the flame.
    • Mix well while adding lemon juice.
    • Once this cools down a bit, layer a spoonful of this on top of the middle layer.
    • Set this for 3 to 4 hours.
  • Serve chilled.
