Drumstick Salan

Murungakkai | drumstick is Appa's favourite veggie and he is one person I know who relishes every fiber of it! I love Drumstick Leaves Dosa and though not much fan of drumstick, since it is very good for health, have atleast 2 pieces of it in whatever be the preparation! That was before Amma made this awesome Drumstick Salan, The drumsticks are perfectly cooked and the spices have blended well with the drumstick and when you savour it along with the gravy....it is simply beautiful!

This recipe is Amma's own creativity inspired by Appa's love for Drumsticks! Amma keeps trying various recipes so that Appa gets to relish his favourite veggies in new avataars!

Drumstick Salan

INGREDIENTS

500 gms Murungakkai | Drumsticks
For Dry Roast
12 Kali Miri | Black Pepper
4 Lavang | Clove
1 1/4 " Dal Chini | Cinnamon
3 Green Elaichi | Cardamom
3/4 tsp Methi | Fenugreek Seeds
3/4 tsp Rai  | Mustard Seeds
3/4 tsp Jeera | Cumin Seeds
For Curry
8 Tomatoes, medium size, roughly chop
4 Green Chillies
2 tsp Adrak | Ginger, finely chopped
1 tblsp White Til | Sesame seeds, dry roasted
200 ml Milk
1 tblsp Oil
1/2 tsp Jeera | Cumin Seeds
1 tsp Haldi | Turmeric Powder
1 1/2 tsp Dhania | Coriander Powder
1/2 tsp Jeera | Cumin Powder
1 tsp Aamchur | Dry Mango Powder
1 tsp Red Chilli Powder
2 tblsp Fresh Dhania | Coriander Leaves, finely chopped
2 tsp Salt | to taste

METHOD
  • For Drumstick
    • Wash Drumstick well. Cut them to 2" pieces with a slit in the center. The slit should be such that the drumstick does not get separated. Keep aside.
  • For Curry
    • In a frying pan, dry roast dal chini, elaichi, methi, rai, kali miri, lavang and jeera. Transfer to a plate and keep aside.
    • In a mixie jar add roughly chopped tomatoes, adrak, green chilli, dry roasted spices and white til and grind to a fine paste. Add water as required. Transfer and keep aside.
    • In the same frying pan, heat oil  and add jeera, when it crackles add haldi, dhania powder, jeera powder and red chilli powder. 
    • Add tomato paste and mix well. Saute for 2 to 3 minutes.
    • Add drumsticks, aamchur and salt. Mix and cover cook on low flame for 10 minutes. Stir occasionally. Cook till drumsticks are done.
    • Add milk and adjust curry consistency by adding required water.
    • When this comes to a boil, switch off the gas.
    • Garnish with chopped dhania.
    • Serve hot with any Rice | Biryani | Pulav | Roti | Paratha.
