Tomato Omelette - A lovely Tomato flavoured Chick Pea Flour Crepe!

The first time I chanced to eat Tomato Omelette was when my eldest sister took me to South Mumbai. We used to have lots of fun on such visits. It used to be Sunday's that we went for our such excursions. Take the Local train to CST and then walk down to Sterling to watch a great flick, have lunch at Kamat's Suvidha, burn out the lunch by a walk to Rhythm House, enjoy lovely music and get the ones that fancy your ears...walk back to Vittal's Bhel Shop for an evening snack and then back to CST station to board the local train home.

It was at Kamat's Suvidha that I read the Tomato Omelette Sandwich in the menu and being intrigued that this was a 100% vegetarian fare, I ordered the same! Oooh! I just loved it. From then to now, have made various changes in the recipe to suit all of our taste buds and the same being shared with all of you!

Tomato Omelette

INGREDIENTS

200 gm Besan | Chick Pea Flour
2 tblsp Rice Flour
1 Onion, roughly chopped
3 Tomatoes, roughly chopped
2 Green Chillies
2 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp Salt | To Taste
For Serving
Fresh Bread Slices, cut diagonally
Homemade Butter
Tomato Ketchup

Tomato Omelette

METHOD
  • Grind to a smooth paste, chopped Tomatoes, onion and green chilli. 
  • Add Besan, Rice flour, Salt and little water to the paste and give it a pulse so that the ingredients mix well.
  • Transfer to a bowl and add sufficient water to get a pouring consistency.
  • Add chopped Dhania and mix well.
  • Place a non-stick dosa tava on the gas on a high flame and when the tava is hot, reduce the flame to medium. 
  • Wipe the surface of the tava with a wet cloth and then pour a ladle of the batter and spread to make round, crepe with the ladle.  
  • Drizzle little oil along the circumference of  Tomato Omelette and keep flame on low. 
  • After about 2 minutes, flip Tomato Omelette to the other side. 
  • After a minute, the other side also would be cooked, flip it again and transfer to a serving plate.
  • Serve along with fresh bread slices buttered and Coriander Mint Chutney | Tomato Ketchup.
I build up a sandwich by spreading little Coriander Mint Chutney on one buttered slice, fold the Tomato Omelette to sit perfectly inside this bread slice and cover it up with the second slice of buttered bread on which little Tomato ketchup has been spread! hmmmm...YUM! 

Appa loves it in this way but I came for hin sans the butter and add few slices of cucumber, capsicum and tomatoes too. Amma prefers the Tomato Omelette as is with chutney and ketchup - no bread!

2. Til Sona Oil - Sesame Oil
