Varagu Pesarattu | Kodo Millet and Green Moong Dal Crepe

As pure vegetarians, getting sufficient protein is a challenge but we do have various options to ensure the daily requirement is met. Amma is very particular about nutrition with no compromise on taste too! In line with this philosophy, we have Green Moong is some way or the other each day! I love the basic Moong Sprouts and this is a sure shot element in my Lunch Box too!

Appa loves his moong when it is a bit processed and hence Amma tries out various dosas using this lovely protein packed lentil. To add to the nutrition quotient, Amma uses millets instead of rice. One such dosa, known as Varagu Pesarattu is loved by all of us. It tastes YUM and is super nutritious too. Packed with the goodness of Moong Dal and Mighty Millet Varagu | Kodo Millet and perfectly flavoured this is a winner on all counts - Health Bhi...Taste Bhi!

Varagu Pesarattu

INGREDIENTS

1 cup Varagu Arisi | Koovaragu | Koden | Harka | Kodra | Arikelu | Kodo Millet
1 cup Green Moong Dal
1/2 tsp Methi | Fenugreek Seeds
2 tsp Jeera | Cumin Seeds
10 to 12 Kadhi Patta | Curry Leaves
4 Green Chillies
1 tsp Adrak | Ginger, finely chopped
To taste Salt
Oil, for roasting
For Onion Mix
2 Onion, finely chopped
1 Green Chilli, finely chopped
2 tblsp Fresh Dhania | Corinader Leaves, finely chopped

Varagu Pesarattu

METHOD
  • Wash and drain Green Moong Dal and Varagu Arisi. Add fresh water and soak overnight. In the morning, wash and drain both for 3 to 4 times. Keep the drained mix aside.
  • Grind to a smooth paste, soaked Green Moong Dal, soaked Varagu Arisi, adrak, green chilli,  curry leaves, methi, jeera and salt.
  • Transfer to a bowl the ground batter. Add required water to make it to a pouring consistency.
  • For Onion Mix
    • In a bowl add chopped onion, green chilli and dhania leaves. Mix well and keep aside.
  • Preparing Varagu Pesarattu
    • Place a non-stick dosa tava on the gas on a high flame and when the tava is hot, reduce the flame to medium.
    • Wipe the surface of the tava with a wet cloth and then pour a ladle of the batter and spread to make round, crepe with the ladle.
    • Drizzle little oil along the circumference of  Varagu Pesarattu and keep flame on low.
    • After about 2 minutes, flip Varagu Pesarattu to the other side. 
    • After a minute, the other side also would be cooked, flip it again.
    • Spread little of the Onion Mix and then after 10 seconds, transfer the Varagu Pesarattu to a serving plate. Prepare remaining Varagu Pesarattus in the same manner
  • Serve hot with any Podi | Chutney | Togaiyal | Pickle | Jaggery.
