Lehsuni Kaddu Ki Roti - Garlic flavoured multigrain flour Indian Flatbread with the sweetness of Red Pumpkin

Red Pumpkin | Kaddu is one delicious veggie that has a host of nutrients beneficial to us. Since all three of us love this veggies, Amma likes to experiment with this. Recently we made Kaddu Kofta Curry and Amma had some Kaddu left over. She was keen to try this in the form of a puri first, then decided to make it healthier by turning it to Roti.

Appa and I loved this creation. Mouth watering and the subtle hint of Ajwain | Carom Seeds and the crunch from White Til | Sesame Seeds with the very distinct Lehsuni flavour and perfectly balanced sweet and spice flavour makes this roti a must try, Added to the wonderful taste is the enriching factor in the form of Jowar | White Millet. This is so delicious that we can relish it just like that as a Tea Time Snack too!

Lehsuni Kaddu Ki Roti

INGREDIENTS

250 gm Kaddu | Red Pumpkin, peeled, cooked 
2 cup Whole Wheat flour
1/4 cup Jowar | White Millet flour
1/4 cup Besan | Chick pea flour
3 Green Chilli
3 - 4 pods Lahsun | Garlic 
1 " Adrak | Ginger
1/2 tsp Haldi | Turmeric Powder
1/2 tsp Sugar
1/2 tblsp Ajwain | Carom Seeds
1 tblsp White Til | Seasame Seeds
2 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp Til | Sesame Oil
To taste Salt
Olive Oil, for making roti
Whole Wheat flour, for dusting

METHOD
  • Make a smooth paste by grinding cooked red pumpkin, green chilli, garlic and adrak.
  • In a mixing bowl the ground red pumpkin paste, whole wheat flour, jowar flour, besan, til, ajwain, sugar, salt, haldi and chopped dhania. Mix and knead to prepare a semi stiff dough. The dough should be like the normal roti dough. Water is not required as the pumpkin paste is sufficient for binding the dough. If required, sprinkle water.
  • Knead again after adding 1 tsp of oil.  Rest the dough for 15 to 20 minutes.
  • Knead the dough again for a minute and divide to lemon size equal portions.
  • Take a portion and flatten it into a small disc. Dust it with whole wheat flour on both sides. Now with a rolling pin gently shape the disc to a 5" diameter roti. In the similar manner prepare the remaining rotis.
  • Heat a non stick tava and reduce the flame to medium. Place one roti on tava and once the top side starts to change colour, flip the roti to other side.
  • After a minute, flip the roti again and drizzle very little oil. Flip again and drizzle little oil on this side too. Once brown spots appear on both sides, the roti is done.
  • Serve hot.
We relished these delicious Lehsuni Kaddu Ki Roti with Surati Dal and Mix Vegetable.
