Medu Vada - a delicious snack made with Urad Dal!

The most favourite SouthIndian Snack pan India is the delicious, crisp to bite but soft to chew Medu Vada. These delicious deep fried snacks are a favourite with most!

We generally limit the deep fried items at home and space it across months. Normally Amma makes these for sure on Shree Varalakshmi Puja and may be once in a quarter. We all love this but enjoy the same responsibly!

Medu Vada

INGREDIENTS

1 cup Urad Dal, around 200 gms
3 Green Chilli, finely chopped
1 tsp Adrak | Ginger, finely chopped
1 tsp Fresh Coconut pieces, thinly sliced and then chopped
2 sprigs Kadhi Patta | Curry Leaves, finely chopped
1/2 tsp Salt | To taste
Oil, for deep fry

METHOD
  • Wash and soak Urad Dal for an hour. Drain water completely from soaked Urad Dal.
  • Grind to a smooth thick paste. Water must be sprinkled very sparingly just to aid grinding. The batter must be very thick.
  • Add adrak, green chilli, kadhi patta, coconut pieces and salt. Mix well.
  • In a deep kadhai heat oil. Once oil is hot, i.e., small bubbles appear or when we drop a small bit of the urad batter it floats immediately, reduce the flame to medium.
  • Wet hand with water and take a small lemon sized portion of dough. flatten it gently and make a small hole in the center. Drop the vada carefully into the oil. In one batch you can fry 4 to 5 Medu Vadas. For this quantity we got around 5 batches.
  • Fry on both sides till they turn golden and become crisp from outside but soft and spongy from within.
  • Scoop the Medu Vadas with a slotted laddle onto an absorbent paper. 
  • Serve hot with either Sambar | Rasam | Coconut Chutney.
