Pineapple Basundi - A refreshing delight to beat the heat!

Pineapple Basundi used to be a dessert which in Appa's office get-together one would most certainly find. This is a simple and easy recipe that celebrates the freshness of Pineapple.

Pineapple is in season and one cannot escape the beckons of the fragrant fresh Pineapples as we walk through my local market. Since we had all the ingredients readily available at home, Amma decided to make this chilled dessert to give us the much needed relief from the sweltering heat!

Basundi is somewhat like our Payasam and we love this Pineapple Basundi as its very easy to make and just Delish!

INGREDIENTS

1 cup Fresh Pineapple, grated
2 tblsp Fresh Pineapple, finely chopped
100 gm Condensed Milk
450 ml Milk
2 tblsp Sugar
Few Strands Kesar | Saffron
1 tblsp Lukewarm Milk
1 tsp Green Elaichi | Cardamom Powder
1 tblsp Almond, finely sliced
1 tblsp Pista, finely sliced

Pineapple Basundi

METHOD
  • In a mixing bowl combine milk and condensed milk. Refrigerate.
  • Soak saffron in lukewarm milk. Once saffron gets infused in the milk, chill it.
  • In a sauce pan add grated pineapple and sugar. Cook till sugar melts and Pineapple absorbs the sugar syrup. Turn off gas and keep aside to cool.
  • Add cooled cooked Pineapple to the chilled Milk along with elaichi powder.
  • Keeping aside little sliced Almonds and Pista for garnish, add the rest and mix. Refrigerate.
  • In a serving bowl or individual serving glasses, pour Pineapple Basundi, add Saffron Milk, little chopped Pineapple cubes and garnish with chopped nuts.
