Amma had been wanting to make Bajra Chaklis from the time she tasted them which I had bought at a local store just to try out. Amma deconstructed the same as per her taste profile and infused her own creativity to make these lovely crispy crunchy munchies!
This was a trial round and very successful. This has surely caught our fancy and may feature as this Diwali special!

INGREDIENTS
1 cup Bajra Atta | Pearl Millet Flour
1/4 cup Chawal ka Atta | Rice Flour
1/4 cup Besan | Chick Pea Flour
1/4 cup Chawal ka Atta | Rice Flour
1/4 cup Besan | Chick Pea Flour
1 tsp Kala Til | Black Sesame seeds
1/2 tsp Lal Mirch | Red Chilli Powder
1/2 tsp Lal Mirch | Red Chilli Powder
A pinch Hing | Asafoetida Powder
1 tblsp White Butter
To Taste Salt

METHOD

- In a mixing bowl add all the ingredients and gently with the tips of the finger, rub in the butter.
- Once the butter is incorporated in the flours, add water and make a soft dough.
- Heat a kadai with oil on medium flame.
- Grease the insides of the chakli maker and attach the plate with large star hole.
- Place a portion of the dough inside the chakli maker and press carefully in concentric circles on a dry cotton cloth.
- To test the oil's temperature, add a small portion of the dough and if it floats up with bubbles, the oil is of perfect heat.
- Gently place the pressed wheat chaklis in the hot oil. After 2 minutes gently flip the chaklis so that the cook on the other side.
- Once the chaklis turn to nice golden colour, gently transfer with a slotted ladle to a kitchen towel.
- In the same manner fry rest of the Bajra Chaklis from remaining dough.
- Cool and store it in an air-tight container.
Note:
a. Ensure to maintain the temperature of oil in between batches.
b. Stored in air tight container and made with Refined Oil, these will last fresh for a month, provided stocks last!
