Carrot Chutney

On Amavasya Day, Appa has onion - garlic free food only. Amma makes finger-licking Chutneys to go with Idlis and Dosas on that day. Carrot Chutney is very tasty abd the best part is it tastes awesome even as a Sandwich Spread!

Carrot Chutney

Ingredients:
1 Carrot, roughly chopped
2 tsp Fried Gram Dal
2 Sukhi Lal Mirch | Dried Red Chillies
1/4 Lemon size Imli | Tamarind
1/2 tblsp Pudina | Mint Leaves
1/2 tblsp Fresh Dhania | Coriander Leaves
1 tsp Fresh Coconut, grated
1 tsp Rai | Mustard Seeds
4 Kadhi Patta | Curry Leaves
1 Sukhi Lal Mirch | Red Chilli, small
1/2 + 1/2 tsp Oil
To taste Salt

Method:
  • In a pan, add 1/2 tsp oil and heat it. Add 2 red chillies and Fried gram dal and roast them for a minute. 
  • Add the roughly chopped carrot and saute for a minute. Keep it aside to cool.
  • Grind to a smooth paste pudina, coriander, coconut, imli, sauted carrot-dal mix and salt.
  • Transfer to a serving bowl.
  • Make a tempering by heating the remaining oil and spluttering the rai, 1 small red chilli and the curry leaves. Pour this on top of the Carrot Chutney.
  • Serve with Idli, Dosa | Uttappam | Adai, Upma | Venpongal and Medu Vada.
I have added few grated carrot on top just for a visual delight!

This tastes great along with Veg Sandwiches. Sometimes I like to make an instant frankie roll using a Phulka roti, this chutney as spread and any veg sabzi.
