Since I can recall our New Year Eve Celebration, its been a tradition which Amma has nurtured...garma garam Gajar ka Halwa with thanda thanda Vanilla Ice Cream at midnight as we ring in the new year with all our hearts and bid adieu to the passing year that has taught and brought us all the joy and memories of that year! And this is what we call as Vanilla Orange Riot!

Ingredients:

6 tblsp Gajar Ka Halwa | Carrot Halwa
3 tblsp Vanilla Ice cream
1 Cashew Nut
5 Almond, sliced finely
Method:
3 tblsp Vanilla Ice cream

Method:
- Take a cookie cutter ring and place on stainless steel plate.
- Spread 3 tblsp of Gajar Ka Halwa inside the cookie cutter ring. Press to make a firm base.
- Refrigerate this for about 20 minutes.
- After setting it for 20 minutes, add the second layer as the vanilla ice-cream. Smooth the surface and keep in freezer to set. The time to set depends upon the cooling capacity of your freezer. Check to ensure the vanilla ice-cream has set completely.
- Spread the remaining Gajar ka Halwa and smooth the surface. Set in the freezer for 10 minutes.
- After 10 minutes, gently lift the cookie cutter, de-mould and transfer the Vanilla Orange Riot on to a serving plate.
- Garnish with cashew nut, almond slices and mint leaves.
- Serve and enjoy the Vanilla Orange Riot!
