Gajar Ka Halwa | Carrot Halwa

Amma loves grated carrot and she normally prefers to use grated ones in salads too! Be it Lemony Carrot Salad, Delhi Carrot Raita, Carrot Payasam or Gajar Ka Halwa...carrot in the grated form is her favourite!

Gajar Ka Halwa is a MUST atleast twice in a year - Diwali and New Year's Eve.

Gajar Ka Halwa

INGREDIENTS


1 kg Delhi Gajar | Red Carrot, grated
400 ml Milk
200 gm Sugar
20 Raisins
20 Almond, finely sliced
1/2 tsp Elaichi | Cardamom Powder
1/2 tblsp Homemade Ghee | Clarified Butter

METHOD
  • In a thick bottomed kadhai or non-stick pan, add the grated carrot and keep on high flame. Saute the carrots for 2 minutes till they change color a bit. We prefer the traditional method as the flavour is awesome and hence do not use the pressure cooker for this process!
  • Add half of the Homemade Ghee | Clarified Butter and mix well. Saute till a nice aroma wafts across.
  • Add milk and mix well with sauteed carrots. Cook on medium flame till the milk is fully absorbed.
  • Add sugar, raisins and almond slices and mix well. Keep aside few almond slices for garnish.
  • Continuously mix the Gajar Ka Halwa till the sugar mixes with the carrots and the halwa becomes semi dry, approximately 8 to 10 minutes.
  • Spread the Gajar Ka Halwa along the surface of the pan so that any remaining water content also gets evaporated.
  • Turn off the gas after 1 minute.
  • Mix elaichi powder well. Transfer to a serving bowl.
  • Garnish with almond slices.
  • Serve hot!

Note:
You can adjust sugar as per your preference, just ensure that after incorporating sugar, the water is fully evaporated to get the right texture of Gajar ka Halwa!
