Raw Papaya Sambharo

Served with a Gujrati farsan - the fafda, this humble accompaniment caught the fancy of Amma. She loved this and asked the farsan maker to share his secret and he had no qualms whatsoever to share the same!

This highly nutritious veggie forms part of our diet. Twice a month is minimum that this is prepared. We love it just like that and it goes as a wonderful side dish for soft phulkas too!

The nutrition value of Papayas is slowly but surely becoming a rage..and this sambharo is super duper nutritious, easy to make!

Raw Papaya Sambharo

INGREDIENTS

1 cup Raw Papaya, grated
1 tsp Rai | Mustard seeds
1/2 tspn Hing  | Asafoetida powder 
1/4 tspn Haldi | Turmeric powder
1 tblspn Oil
1 medium sized Lemon's juice
3 Green Chilli, finely chopped
1/2 tspn Adrak | Ginger, finely chopped
2 tblspn Fresh Dhania | Coriander leaves, finely chopped
To taste Salt

METHOD
  • Wash the Raw papaya thoroughly. Peel the skin. Grate the papaya. In a bowl add the grated papaya and pour sufficient water so that the grated papaya is immersed. After 10 minutes, gently squeeze the grated papaya and keep it aside.
  • In a pan, heat oil and add rai. 
  • When rai crackles, add the hing, adrak, green chilli, haldi powder and the grated papaya and mix well.
  • Add salt to taste and mix well.
  • Keep the gas on medium flame and cover and cook for about 2 minutes. Take care not to over cook the papaya.
  • Turn off the flame  and add lime juice and 3/4 of the fresh dhania. Mix well and transfer to serving dish.
  • Garnish with Fresh dhania and serve it as accompaniment with fafda and jalebi or you can relish it just as we do - with soft phulkas!
