Date with Coconut Ladoo

Easy to make, a very tasty instant sweet...that can be made in a jiffy! Amma wanted to try this recipe since a long time, but since we introduce very little coconut in our diet, she was a bit wary about making this! But finally she decided to make this for Friday Puja...very tasty...one can gobble...gobble...gobble...but then please relish it slowly over few days time!

Date with Coconut Ladoo

Ingredients:
100 gm Desiccated Coconut Powder
100 gm Milk Powder
50 gm Powdered Sugar
4 tsp Milk, luke warm
8 Khajoor | Dates
8 Golden Raisins
8 Black Raisins

Method:
  • Remove the stone from the dates and cut them length wise and then dice them to small cubes. We used seedless dates.
  • In a mixing bowl, add desiccated coconut powder, milk powder, powdered sugar and 3 tsp of milk. Knead to make a soft dough. If required, add the remaining milk. The dough should be such that you can make smooth ladoos of it.
  • Make 15 equal portions, about the size of a lemon. 
  • Take one portion, give it a shape of laddoo and with your thumb press in the center to make a small vati | bowl like shape.
  • Add few date cubes inside the vati shape and then cover to make laddoo shape again.
  • Prepare the remaining ladoos in the same fashion.
  • Garnish each laddo with 1 raisin. 
  • Serve and relish. These ladoos need to be refirgerated.
Easy to make, which even kids will love to make along with you!
