Lauki Paratha | Doodhi Paratha | Bottlegourd Flatbread

Lauki | Doodhi | Bottlegourd is a very nutritive vegetable and Amma makes variety of delectable goodies using this wonder veggie! Recently Amma made Doodhi Muthia which is so tasty as a tea-time snack! That's when Appa suggested why not try making this as a Paratha! And presto! Amma made these lovely, delicious...simply YUM Lauki Parathas...which are so satiating and simply wonderful!

Lauki Paratha | Bottlegourd Flatbread

Ingredients:
For Sauteing:
1 cup Lauki | Doodhi | Bottlegourd, peeled and grated
1 tblsp Carrot, finely grated
2 tsp Dhania | Coriander Powder
2 tsp Saunf | Fennel Powder
3 Green Chillies, finely chopped
1/2 tsp Adrak | Ginger, finely chopped
1 tsp Jeera | Cumin Seeds
1/2 tsp Haldi | Turmeric Powder
1 tsp Oil
For Dough:
2 cup Whole Wheat Flour
1 tblsp Besan | Chick Pea Flour
1 tblsp Mixed Millet Flour
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp White Til | Sesame, dry roasted
3/4 cup Water
3/4 tsp Salt | to taste
1 tsp Oil
For Paratha:
Whole Wheat flour, for dusting
Oil

Method:
  • For Sauteing:
    • In a frying pan heat oil, add jeera. When jeera splutters add all the ingredients menitoned for sauteing. Saute for 2 to 3 minutes. Switch off the gas. Keep the Lauki mix aside.
  • For Dough:
    • In a large mixing bowl add sauteed lauki mix, all the ingredients mentioned for dough except Oil.
    • Mix well and make a stiff dough adding required water.
    • Add the Oil and knead the dough again for about 2 minutes. Cover and keep aside for half an hour.
  • Divide the dough to 10 equal portions.
  • Roll out the paratha into 5" diameter thick roundels. Dust with whole wheat flour while rolling the paratha.
  • Place the tava on the gas on high flame. Spread Oil on the surface and when this gets hot, reduce the flame to medium (You may also use any vegetable oil |Ghee|Clarified Butter).
  • Place the rolled Paratha on the hot tava..let one side cook for about 2 minutes. Flip to the other side. Gently drizzle very little Oil on its surface. Once both the sides have got brown spots, the Paratha is done. Continue similarly for the remaining 9 parathas.
  • Serve hot with any Raita | Pickle | Homemade Butter | Curd.
