Lemon Rice

Lemon Rice is such a delectable that can be made very fast. Its ideal as Lunch Box Option. Amma makes this frequently as Appa just loves this. He is sure to eat a bit extra when its Lemon Rice day!!

Lemon Rice

Ingredients:
200 gm Basmati Rice
2 cups Water
1/2 tsp Haldi | Turmeric Powder
1 tsp Jeera | Cumin Seeds
1 tsp Channa Dal
1 tsp Rai | Mustard Seeds
25 gms Groundnut | Peanut
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 Sukhi Lal Mirch | Dried Red Chilli,
2 Lemon's Juice
1 tsp Oil 
To taste Salt

Method:
  • Wash and soak Basmati Rice for 30 minutes.
  • In a non stick kadhai add soaked Basmati Rice, water, haldi and salt. Mix well.
  • When this comes to a boil, cover and cook on a low flame for 10 - 15 minutes or till the rice is cooked. Check after 10 minutes and gently from the sides, stir the rice ensuring the rice strands do not break.
  • Once the rice is cooked, switch off the gas, and transfer to a seperate plate. Spread the rice gently and fluff it so that the strands are seperated. Keep aside.
  • In the same non stick kadhai, heat oil and add rai, jeera, channa dal, curry leaves, red chilli and peanut. When rai and jeera splutter and the dal starts to change colour, add the fluffed rice, mixing gently. 
  • Switch off the gas and add lemon juice. Mix well.
  • Transfer to serving bowl.
  • Garnish with chopped dhania leaves.
  • Serve hot with Lemon Pickle and roasted papad.
This rice is also made during Aadi Perukku also known as Aadi 18 along with various other types of Rice like Thaiyr Sadam, Puliyodharai, Coconut Rice, Pepper Rice, Black Til Rice, Jeera Rice Venpongal and Sakkarai Pongal.
