RWR Spiced Dosa is Amma's moniker for Rice Wheat Rava Dosa with veggies and spices! Its an easy to make dosa and one can add their favourite vegetables to make it even more nutritious!
Ingredients:
1/2 cup Rice Flour
1/2 cup Whole Wheat Flour
1/2 cup Rava | Semolina
1 tblsp Carrot, finely grated
1 tblsp Onion, finely chopped
1 tblsp Pudina | Mint, roughly chopped
1 tblspn Fresh Dhania | Coriander leaves, finely chopped
3 Green Chillies, finely chopped
1 tspn Adrak | Ginger, finely chopped
1/2 cup Buttermilk
Water, as required
Oil for Dosa
To taste Salt
For tempering:
1/2 tspn Rai | Mustard Seeds
1/2 tsp Jeera | Cumin Seeds
1/2 tspn Urad Dal
A pinch Hing | Asafoetida Powder
1/2 tsp Oil
Method:
- In a mixing bowl add all the flours, grated carrot, chopped onion, roughly chopped mint, freshly chopped dhania, green chillies, adrak and salt.
- Add buttermilk and mix to make a lump free batter.
- Add water and adjust batter to make it thinner than the regular dosa batter consistency.
- Prepare the tempering with 1/2 tspn oil, rai , jeera and urad dal and add to the RWR Dosa batter.
- Place a non-stick dosa tava on the gas on a high flame and when the tava is hot, reduce the flame to medium.
- Wipe the surface of the tava with a wet cloth and then pour the RWR Dosa batter. This batter is thin, so just make an outer circumference and then fill in the gaps. This batter cannot be spread with the ladle like the regular dosa batter.
- Drizzle little oil along the circumference of the dosa.
- After about 2 minutes, flip the dosa to the other side. This dosa is a bit soft as we do not add any Maida | Refined flour, so take care when you flip it to the other side.
- After a minute, the other side also would be cooked, flip it again and fold the dosa into half while on the tava itself. The surface that was on the tava as you made the dosa will tend to be brown than the top surface. Hence we flip it twice.
- Transfer to the serving plate and prepare remaining dosas!
- This will make 10 Dosas.
- This dosa can be served with Sambar, Podi | Chutney | Thogaiyal and/or Pickle.
We had this with Molga Podi and Tomato Onion Chutney. This dosa tastes even more tasty when its at room temperature!
