Sakkaravalli Kizhangu Thoran | Sweet Potato Sabzi

Sakkaravalli Kizhangu | Ratalu | Sweet Potaoes are a wonderful root vegetable as they are full of fiber and essential nutrients like beta carotene, Iron, Vitamin C and Magnesium. Infact these are also a good source of Vitamin D!

A simple steamed sweet Potato is so delicious that sometimes Amma loves to have it as a mid day snack! This Thoran is so delicious and easy to make and kids will just love it!

Sakkaravalli Kizhangu Thoran | Sweet Potato Sabzi

INGREDIENTS

300 gms  Sakkaravalli Kizhangu | Ratalu | Sweet Potato
1/4 tsp Haldi | Turmeric Powder
1/2 tsp Rai | Mustard Seeds
1 tsp Urad Dal
1 sprig Kadhi Patta | Curry Leaves
1/2 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp Fresh Coconut, grated
1 tsp Oil
To taste Salt

METHOD
  • Wash  and peel sweet potatoes. Cut them into 1/4 " cubes. Add water such that the cubes are above the water level by half inch. This needs very little water to cook. Add haldi and salt. Mix well. On low flame cook the sweet potatoes for 3 - 4 minutes, mixing gently occasionally.
  • After the sweet potatoes are cooked, in case there is any excess water, drain it and keep the cooked sweet potatoes cubes aside.
  • In a kadhai, heat oil. Add rai, urad dal and curry leaves. 
  • When the rai splutters add cooked sweet potato cubes. Mix gently.
  • After a minute and switch off the gas.
  • Transfer to a serving bowl. Garnish with finely chopped fresh dhania leaves and grated coconut.
  • Serve as a side dish with any Sambar | Rasam.
