Method:
  • In a kadhai add half of the ghee and when that melts add vermicelli and roast. Ensure the vermicelli just changes color evenly a bit. Keep aside in a plate.
  • In the same kadhai, add remaining ghee and roast the rava till the raw smell goes and the rava changes color evenly a bit. Transfer the roasted rava to another plate.
  • Add oil in the same kadhai and when the oil is hot, add the rai, jeera, channa dal, urad dal, curry leaves and ajwain.
  • Once the rai splutters, add onion, ginger and green chillies.
  • Saute for about 2 to 3 minutes.
  • Add all the vegetables and saute for 2 minutes.
  • Add water and salt.
  • When the water begins to boil, on a medium flame, add the roasted vermicelli slowly, and mix well.
  • After 2 minutes, when the vermicelli is almost cooked, add the roasted rava, continuously stirring to ensure no lumps are formed.
  • Switch off the flame when the upama is done.
  • Garnish with roasted Cashew nuts.
  • Serve it with Podi | Chutney | Thogaiyal and/or Sambar. Just a sprinkle of sugar along with this upama also tastes awesome!
