We wanted to have a light dinner today and so the ultimate choice was a nutritious vegetable filled oats Khichadi|Porridge. Luckily all three of us love to have a light supper and this just fits the bill. Easy to make, full of flavour from the heat of black pepper, nutrition of vegetables and goodness of oats!
INGREDIENTS
4 tblsp Oats
8 tblsp Water
8 tblsp Water
1 tblsp Carrot, finely chopped
50 gm Gobi | Cauliflower, cut into small florets
1/2 Shimla Mirch | Green Bell Pepper, finely chopped
1/4 cup Fresh Mattar | Green Peas
3/4 tsp Kali Miri | Black Pepper Seed, coarsely ground
1/2 Shimla Mirch | Green Bell Pepper, finely chopped
1/4 cup Fresh Mattar | Green Peas
3/4 tsp Kali Miri | Black Pepper Seed, coarsely ground
1/4 tsp Haldi | Turmeric Powder
1/2 tsp Jeera | Cumin Seeds
1 sprig Kadhi Patta | Curry Leaves
1 sprig Kadhi Patta | Curry Leaves
1 tsp Homemade Ghee | Clarified Butter
To taste Salt
METHOD
- In a non-stick Kadhai, heat ghee. Add jeera, curry leaves and pepper.
- When they begin to splutter add all the vegetables.
- Add haldi and saute for a minute.
- Add water and keep on low flame.
- When the vegetable cooks, approximately within 3 minutes, add oats and salt.
- Mix well and cover cook for 2 minutes.
- Check to ensure oats is cooked. Once done, transfer to a serving bowl.
- Serve hot.
Veggie Healthy Oats Khichadi can be served with any Raita | Pickles. This tastes good when it is hot!
