Delhi Carrot Raita | Delhi Carrot Yogurt Dip

Winter is the only time when we get luscious, juicy red Delhi Carrots! And that is the time when we make Gajar ka Halwa, Carrot Orange Ginger Refresher and Amma's favourite - Delhi Carrot Raita! This raita is so delicious and tastes good with almost everything! You can gorge on it as a stand alone dish or as an accompaniment! Sometimes I use this as a dip along with any crackers! Just YUM!

The best part is it is very easy to make..the only labour being that of grating the carrot! But then...its worth it as this is so healthy and tasty!

Delhi Carrot Raita | Delhi Carrot Yogurt Dip

INGREDIENTS

1 cup Delhi Carrot, peeled and grated
3/4 cup Yogurt, whisked
1/4 tsp Jeera | Cumin Powder
1/4 tsp Sendha Namak | Kala Namak | Rock Salt
1 Green Chilli, finely chopped
1 tsp Fresh Dhania | Coriander Leaves, finely chopped
A pinch Hing | Asafoetida Powder
1/4 tsp Rai | Mustard Seeds
1/4 tsp Urad Dal
1/4 tsp Oil

METHOD
  • In a mixing bowl add yogurt and whisk it till smooth. 
  • Blend in cumin powder, hing and rock salt.
  • Add grated carrot, chopped dhania and chopped green chilli. Mix well.
  • Make a tempering by heating oil in a small pan. Add rai and urad dal. When rai splutters, pour tempering on to the Raita.
  • Mix gently and transfer to serving bowl.
  • Serve with any Roti | Paratha | Biryani | Pulav.
We enjoyed Delhi Carrot Raita along with Jowar Roti and Cabbage Mattar Masala. I like to make this with thick hung curd, and then use this as a spread for vegetable sandwiches! Very healthy bread spread!
