Tomato Rice Sevai | Tomato Rice Noodles

The tangy flavour from Tomatoes, the soft Rice Sevai, perfectly balanced spices and the occasional crunch from dry raosted Til....this is all one needs to make a hit chart-buster! Tomato Sevai is so delicious and it makes for a great Breakfast| Tiffin | Light Supper Option! A riot of colors makes it so appealing too!

In just a matter of less than 30 minutes, this awesome dish is ready! Today Amma made this lovely Tomato Sevai and we had a hearty breakfast!

Tomato Rice Sevai | Tomato Rice Noodles

INGREDIENTS

250 gms Rice Sevai
4 Tomatoes, finely chopped
2 Onion, finely sliced
1 tblsp Jeera | Cumin Seeds
1/2 tsp Haldi | Turmeric Powder
1 tsp Dhania | Coriander Powder
1 tsp Saunf | Fennel Powder
A pinch Hing | Asafoetida Powder
3 Green Chillies, finely chopped
8 Kadhi Patta | Curry Leaves
1 tsp Oil
To taste Salt
For garnishing
1 tsp White Til | Sesame Seeds, dry roasted
1 tblsp Fresh Dhania | Coriander Leaves

METHOD
  • In a large vessel boil water and then switch off the gas. Mix salt and then add the Instant Rice Sevai. The sevai must be completely covered by boiling hot water. Cover and after 3 minutes, drain the water completely. 
  • Transfer the cooked sevai to a plate and spread them gently across the plate so that they are fluffy and separated.
  • In a non stick pan, heat oil and add jeera and curry leaves.
  • When jeera splutters add onion, haldi and green chilli and saute for 1 minute. The onion needs to just sweat and not change colour.
  • Add finely chopped Tomatoes and salt. Mix well. Saute for 4 to 5 minutes or till tomatoes are nicely cooked.
  • Add dhania powder, saunf powder and hing. Mix well.
  • Add cooked sevai and gently mix well. On low flame cook for 2 minutes and then switch off gas.
  • Transfer to a serving bowl and garnish with finely chopped dhania leaves and dry roasted white til.
  • This quantity is sufficient for 4 to 5 servings.
  • Serve hot along with Coconut Chutney.
