Shahi Veg Biryani - a Royla medley of Rice, Veggies, Fresh Cheese mildly spiced with Indian Spices!

We love veggies and every meal has to have salad! Sometimes, Appa is in no mood to eat raw salad...that's when Amma normally tries to incorporate as many veggies as possible and make a great Biryani | Pulav! That's what happened today and Amma dished up a great combination of Broccoli, Mushrooms, Baby Corn, Shimla Mirch, Carrot, Peas and Caramelized Onion in a biryani style and a Tomato Onion Raita to go with it. These two along with roasted papad simply delicious, filling yet light and the aroma captivating!

Shahi Veg Biryani

INGREDIENTS

1 cup Basmati Rice
2 Onion, thinly sliced
100 gms Broccoli, cut to small florets
200 gms Mushroom, thinly sliced
1 Shimla Mirch | Capsicum | Green Bell Pepper, thinly sliced
1 Carrot, small, thinly sliced
50 gm Fresh Mattar | Peas
6 Baby Corn, diagonally sliced
1 tsp Shahi Biryani Masala
1 tsp Kasuri Methi | Dried Fenugreek Leaves
1 tsp Oil
2 tsp Salt | to taste

METHOD
  • Wash and soak Basmati Rice for 1 hour, in 2 cups water. Keep aside.
  • In a kadhai, take 1 tblsp of the sliced onions and caramelize them to a deep brown color. Keep aside for garnish.
  • Add the remaining sliced onions into the same kadhai and saute them till they become translucent.
  • Add mushrooms and saute for 2 minutes.
  • Add chopped bell peppers, carrot, capsicum, baby corn, broccoli and peas. Saute this for 2 minutes.
  • Add salt and mix well. Spread the vegetables in the kadhai to form a layer.
  • Add soaked rice as a layer on top of the vegetables.
  • Add the soaked rice water gently from the sides.
  • After the water comes to a boil, reduce the flame to low and cover cook Shahi Veg Biryani for 5 minutes.
  • After 5 minutes, sprinkle Shahi Biryani Masala and gently fold in the rice from the sides so that the rice grains get separated. 
  • Cover cook for 5 minutes.
  • Once the Biryani is cooked, switch off the gas. 
  • Crush the Kasuri Methi leaves with your palms and sprinkle them on top of the biryani.
  • Transfer to a serving bowl. Garnish with the caramelized onion slices.
  • Serve Shahi Veg Biryani hot with any Raita | Pickle | Roasted Papad.
