Aamrakhand - a mildly sweet dessert made with the goodness of Mango and Yogurt

Mango season is finally here and this is a sure shot way to ring in the wonderful recipes that can be made with this King of Fruits - Aamrakhand!

Appa gets nostalgic of his corporate days as his office cafeteria used to serve food fit for Royalty. Aamrakhand being the then Chef's specialty. This recipe is 90% the way he shared with Appa and the remaing 10% is Amma's healthier avataar at work...adding a bit of honey to cut down the sugar as well as passing it through the muslin cloth to get the creamy, soft texture! Elaichi Powder is Amma's addition as she loves this spice!

Aamrakhand

INGREDIENTS

2 cups Yogurt
1 tblsp Condensed Milk
1 tblsp Honey
1 cup Mango Pulp
1/2 tsp Mango Crush
1/2 tsp Elaichi | Cardamom Powder | Optional
1 tblsp Pistachios, finely chopped
Few Saffron Strands

METHOD
  • Place a fine muslin cloth over a sieve and add yogurt on top of the muslin cloth. Gently gather the sides of the muslin cloth and tie up a knot. Place the sieve along with the muslin cloth over a bowl and keep aside in the refrigerator, overnight. Next day we get nice thick yogurt in the cloth with all the whey in the bowl.
  • Transfer the thick yogurt into a bowl and combine it with condensed milk, honey, elaichi powder, mango crush and mango pulp. I add the mango crush so that the mango essence is obvious even before you taste this wonderful Aamrakhand. 
  • Pass this mixture through a fine muslin cloth. I do not skip this step as this is what gives a smooth, creamy Aamrakhand as this breaks down the grainy texture.
  • Transfer to a serving bowl and garnish with chopped pista and saffron strands.
  • Refrigerate and serve chilled.
We enjoyed this Aamrakhand along with Phulka Roti, Steamed Rice, Rajasthani DalBaby Alu Phool Makhana Sabzi, Kothamalli Moru, Nellikai Urgai and Roasted Papad.

3. Nestle Milkmaid Condensed Milk
