Mango Lassi - Thick and smooth mango flavoured yogurt | A Summer Special!

Amma had made a list of items that she would love to make before the Mango season ends. I had got lots of mangoes and a variety of them too ranging from the most delightful Alphonso, to Pairi to Badami to Lalbagh for Vishu.

With the temperature on the rise, Appa Amma were in no mood to have a hot cuppa during Tea-time and hence Amma decided to chill the system with thanda thanda Mango Lassi! This is super easy to make with very few ingredients and tastes simply delicious.

A great refreshing drink as soon as i reached home from work! Really a great way to appreciate the good things that life has to offer! Hmmmm....Yummmm!

Mango Lassi

INGREDIENTS

100 ml Thick Alphonso Mango Pulp, freshly extracted
1 tblsp Alphonso Mango, cubes
400 ml Thick Yogurt, chilled
1/4 tsp Elaichi | Cardamom Powder
To taste, Sugar | Honey | Optional
4 tblsp Crushed Ice, Optional

METHOD
  • In a blender add mango pulp, yogurt, crushed ice, elaichi powder and sugar|honey.
    • We did not add any sweetener as the mangoes where very sweet and we prefer the lassi with little sweetness only!
    • For added flavour, you may also add rose water while blending.
    • We did not add any crushed ice while blending as the yogurt was super chilled.
    • You can add any type of mango, which is sweet and which preferably does not have  fiber when pulped.
  • Blend to a smooth puree.
  • Transfer to serving glasses, garnish with chopped mango cubes.
  • Serve chilled.
Mango Lassi makes for a great Welcome Drink as this can be prepared a day in advance. A sure way to chill your family, friends and guests in this Summer!

Note:
a. We have used low fat yogurt.
b. You can also add 2 tblsp of Malai|Fresh Cream to make the Lassi even more rich!
