Minty Alu - an exotic mix of fresh Mint generously coated on Potatoes! A great Starter | Snack | Side Dish

We used to eat Potatoes in a controlled manner. Recently during Appa's routine health check up, the doctor in charge wanted to know as to the diet. She seemed pretty impressed by the type of diet we had but was curious as to why we shunned the favourite Potatoes. That's when she informed us regarding the health benefits of this tasty Alu and said the way we cook it adds to the calorific value! So no to any deep fried Alu's but steamed, roasted, baked and boiled Alu's were beneficial to health since they are a good source of Fiber, Iron, Potassium and Vitamins B and C. Added to that they keep our nervous system healthy!

So from then on we have made it a point to relish these lovely Alu's once in 2 weeks! So many yummy dishes can be made from this versatile veggie! Best I love is when this is paired with Mint! The Minty Alu is simply a great combination and the beauty of this recipe is that it makes a great Appetizer | Snack | Side Dish too!

Minty Alu

INGREDIENTS

5 Alu | Potato, boiled, peeler and cut to bite size
1/4 cup Pudina | Mint Leaves, loosely packed
1/2 cup Dhania | Coriander Leaves, loosely packed
2 Green chillies, finely chopped
1 tsp Jeera | Cumin Seeds
1/2 cup Water, approx
1 tblsp Oil
1/2 tsp Haldi | Turmeric Powder
1 1/2 tsp Aamchur | Dry Mango Powder
1 tsp Red Chilli Powder
1 tsp Salt | To taste

METHOD
  • Grind to a smooth paste pudina, dhania and green chillies. Keep aside the herb paste.
  • In a thick bottom non stick pan heat oil and add jeera.
  • When jeera crackles, add the herb paste and saute till it gives out a lovely aroma.
  • Add haldi, aamchur, red chilli powder and salt. Mix well.
  • Add potato pieces and toss well such each piece gets nicely coated with the herb-spice paste.
  • Add water and let the potatoes simmer so that the flavours are completely absorbed by the potatoes.
  • Once the water is absorbed, switch off the gas.
  • Transfer to a serving bowl and serve hot.
