In quest of ensuring Appa enjoys his salad, Amma tires various means. One such success is this tasty, colourful and healthy Stir Fried Radish Carrot Salad. Being stir fired, it is just about cooked with no loss in nutrition too! Appa loves this and does not mind relishing the same every day!
I do not mind having a bowl of this as it is very delicious and best part is the vegetables are not over cooked so retain a slight crunch!

INGREDIENTS
1 cup Mullangi | Mooli | Radish, thinly sliced
1 cup Gajar | Carrot, thinly sliced
3 Green Chillies, finely chopped
1/2 tsp Oil
1/2 tsp Rai | Mustard Seeds
1/2 tsp Haldi | Turmeric Powder
1/4 tsp Ajwain | Carrom Seeds
To taste Salt
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1/2 tblsp White Til | Sesame Seeds, dry roasted
METHOD
- In a kadhai, heat oil and add rai and ajwain.
- As rai splutters, reduce flame to medium, and add haldi, chopped green chillies, mooli slices and carrot slices. Stir fry for a minute.
- Add salt and mix well. Cover cook for 2 minutes.
- Stir and then again cover cook for 2 minutes till done.
- Switch off gas and transfer to serving bowl.
- Garnish with chopped dhania and dry roasted white til.
- Serve as Salad.
We enjoyed this Salad for lunch today!
