Aubergine Wraps - A lovely Appetizer!

I had tasted these lovely Aubergine Wraps at a formal gathering and always thought we needed to prepare the Brinjals either in a microwave | oven. When I mentioned about this to Amma, she was too keen to try it out in her own way and this came out so delightful and delicious! Our OTG at home is a sleeping partner as Amma is somewhat averse to the notion of baking! I hope this changes so that we can try out many more lovely recipes using this method of cooking too!

I guess all you need is a bit of imagination and loads of initiative then anything is possible! Amma surprised me with this beautiful platter and I was totally stunned at the finesse! Appa loved these and was very curious as to how Amma had made them and wanted to know the Method!

Aubergine Wraps

INGREDIENTS

4 Brinjal | Aubergine | Eggplant, slices
Olive Oil, for brushing Brinjal slices
Pudina | Mint Leaves, for garnish
Toothpick
For Filling
1/2 tsp Olive Oil
1/4 th Green Bell Pepper, julienne
1/4 th Red Bell Pepper, julienne
1/4 th Yellow Bell Pepper. julienne
1/2 Onion, small, thinly sliced
Oregano Flakes | To taste
Basil Flakes | To Taste
Chilli Flakes | To Taste
Salt | To taste 
1 tblsp Parmesan Cheese, grated

Aubergine Wraps

METHOD
  • Preparing the Brinjal
    • Slice Brinjals length wise to thin uniform strips. The long shaped brinjals will be the best for this.
    • Brush Olive oil on both sides.
    • On a grill, gently cook both sides for about a minute till the brinjals are done and become soft. Ensure they do not burn.
  • For Filling
    • In a non stick pan, heat oil and saute onion for a minute. 
    • Add the bell peppers, salt, oregano, basil and chilli flakes. Toss and switch off the gas.
    • Transfer the bell pepper mix to a bowl and add Parmesan Cheese. Gently mix.
  • Preparing Aubergine Wraps
    • Place a sauteed Brinjal slice on a flat surface. Place a bit of the filling towards the tip of the slice and gently roll it up.
    • Secure the edge with a toothpick.
    • Prepare remaining wraps.
    • Garnish with Mint leaves.
    • Serve with any dip | Tomato Sauce.
We relished this delightful Aubergine Wraps with Tomato Sauce. A great Appetizer and a healthy Snack!
