Milk Toffee - A Sri Lankan Delight!

Milk Toffee is an easy to make Sweet. Amma came to know about this recipe when she came to Mumbai for the first time as a young bride. Appa Amma where staying in Matunga then. Amma was like a daughter to the next door neighbour and that Aunty taught Amma many interesting recipes. Of those, Milk Toffee is one recipe which Amma makes on any festive occasion or when she is going out of town as sweet goodies to be shared with family.

The important aspect of this recipe is that you need to stir from start to finish! That is the only catch. And you must ensure the flame of the gas is at medium. If you have the patience for both these factors, the Milk Toffee you make will surely win the hearts of your loved ones!

Milk Toffee - A Sri Lankan Delight!

INGREDIENTS

1 can Sweetened Condensed Milk
1 1/2 can Sugar
1/2 can Water
2 tblsp Homemade Ghee | Clarified Butter
2 tblsp Chopped Nuts - Cashewnuts | Almonds
Homemade Ghee | Clarified Butter, to grease tray

METHOD
  • Grease a tray well and keep aside.
  • In a deep bottomed thick non stick kadhai, add Sweetened Condensed Milk, Sugar and Water. The proportion is wrt the can of the condensed milk. 
  • Place Kadhai on medium flame and keep stirring continuously for 10 to 15 minutes. You must not stop stirring nor increase the flame.
  • As you see the colour of the mixture becoming darker, add ghee.
  • Keep stirring for another 10 to 12 minutes on low flame, till the mixture starts leaving the sides of the kadhai.
  • Once the mixture appears as a cohesive mass, switch off the gas.
  • Add the chopped nuts and mix well. We added Almonds only this time.
  • Transfer to the greased tray and spread to get a uniform flat surface.
  • Once the mixture becomes a bit cool, while still slightly warm, mark to desired shape.
  • Once cool, cut along the markings and store in air tight container.

Note:


a. You can also add about a tsp of Vanilla essence.
b. If you love the Elaichi | Cardamom flavour, about 1/2 tsp will really make this Milk Toffee even more aromatic.
