Thai Style Pineapple Cucumber Salad - a Summer fresh Salad!

We love salads and I try experimenting with the seasons fresh produce. I like the sweet and tart flavour from the fresh Pineapple when fused with Cucumbers and the crunch from roasted peanuts with a slight sweetness from soy sauce and sugar. Well seasoned with salt, fresh coriander and garlic..this Salad is a must when we buy fresh Pineapples!

Thai Style Pineapple Cucumber Salad


INGREDIENTS

3/4 cup Pineapple, cubed
3/4 cup Cucumber, peeled and cubed
1/4 small Red Bell Pepper, diced
2 tblsp Peanut, roasted and peeled
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1/2 tsp Red Chilli Flakes
1/4 tsp Basil Flakes
For Dressing
1/2 tsp Soy Sauce
1/2 tsp Honey
1/2 tsp Lemon juice
1/4 tsp Lahsun | Garlic paste

Thai Style Pineapple Cucumber Salad

METHOD
  • In a small bowl add lemon juice, soy sauce, honey and garlic paste. Combine well. Refrigerate the dressing.
  • In a mixing bowl add Pineapple cubes, Cucumber cubes and diced Red Bell Pepper. Refrigerate.
  • Grind roasted and peeled Peanut to a rough coarse powder. Just give it a pulse for 2 seconds in the mixer. 
  • Just before serving add chopped dhania, Basil flakes and red chilli flakes to the chilled chopped veggies.
  • Add Peanut coarse powder.
  • Pour chilled dressing on the salad. 
  • Gently toss the salad.
  • Serve immediately.
Note:
a. Traditionally Fish sauce is also added in the dressing, We are pure Vegetarians and hence have skipped that!

2. Tata Salt Lite
3. Under The Mango Tree Honey - Sweet Clover
4. Ching's Dark Soy Sauce
