Mix Veg Uttappam - this is fondly called as Rangeela Uttappam in our home! No hard and fast rule as to how you make this and with what you add to this...just that the canvas, i.e., the base Uttappam is a must!

1 big laddle Homemade Idli|Dosa|Uttappam batter
1/4 tsp each Red | Yellow | Green Bell pepper
1/2 tsp Carrot, grated
1/2 tsp Onion, finely chopped
1 tsp Fresh Dhania | Coriander leaves, finely chopped
1 Green Chilli, finely chopped
1/4 tsp Homemade Green Moong Dal Sprouts
1 tsp Oil
1/2 tsp Carrot, grated
1/2 tsp Onion, finely chopped
1 tsp Fresh Dhania | Coriander leaves, finely chopped
1 Green Chilli, finely chopped
1/4 tsp Homemade Green Moong Dal Sprouts
1 tsp Oil
Method:
- Place the Dosa tava on high flame. Spread a bit of oil on the surface with a tissue paper | cloth. When the tava is hot, reduce the flame to medium.
- Pour a ladle of Uttappam batter and make a thick uttappam about 5 " diameter. Keep the gas on very low flame.
- Add the toppings in the manner you like. We tried it in this fashion toady!
- Drizzle very little oil along the sides.
- After a minute flip the Rangeela Uttappam to the other side.
- Once its cooked, transfer to a serving plate.
- Serve along with any Sambar, Podi | Chutney | Thogaiyal of your choice.
Appa loves to have this along with any chutney and Homemade Molga Podi mixed with Curd.
