A bowl of warm soup anytime is welcome for us! More so during winter or when you are down with a cold! This is Amma's healthier version of the Spinach Soup...tastes awesome...and we just love this!
Ingredients:
1 small bunch Palak | Spinach
1 Onion, small, roughly chopped
1/2 " Adrak | Ginger
1/4 tsp Kali Miri | Black Pepper Powder
1/4 tsp Jeera | Cumin Powder
1/2 tsp Dahi | Curd, as garnish
To taste Salt

1 small bunch Palak | Spinach

Method:
- Wash the spinach well and keep to dry.
- In a frying pan, saute the spinach for 2 minutes. Switch off the gas. Transfer the blanched spinach to a bowl of cold water. This is done to retain the bright green color of the spinach!
- Add the blanched spinach, adrak, onion, jeera amd plack pepper to make a thick smooth paste.
- Transfer this paste to a sauce pan and add water to adjust the thickness as per your preference. Keep the sauce pan on low flame.
- Add Salt and mix well.
- Once the Palak soup comes to a boil, switch off the gas.
- Transfer to serving bowl, garnish with swirls of curd and serve hot!
